
The maturation of the wine is the process which takes place between fermentation and bottling – this stage cleanses the wine and helps it to mature and enhance the bouquet. There are two main ways to mature or age wine: either in stainless steel vats or in wooden barrels. For our special wines, we chose to use oak barrels, a guarantee of quality in the eyes of many amateurs.
The limited quantity of wine which is matured in wooden barrels allows a carefully controlled oxidation and promotes the development of new aromas. Tannins are extracted by the wine and bring about different aromatic mixes. Wine which is matured in this way generally turns out to be more delicate and to be longer in mouth.
We use barrels made out of French oak originating from the forests of Tronçais, which has a worldwide reputation as being the best wood for aging wine - the grain of wood is unusually dense and fine, which helps develop a wine of incomparable delicacy and elegance.
