In order to preserve the natural environment, the monks at the Abbaye de Lérins have opted for “reasoned agriculture” (halfway between “conventional” agriculture and organic agriculture). This agricultural method takes into all account the balance and the preservation of the environment.

Production

The term “wine production” describes all the operations involved in the process of transforming the grape must into wine. Some of these processes, such as alcoholic fermentation, are necessary. Other processes are optional and help to refine the contour of the wine and develop its aromatic and taste characteristics.

In this way the grapes used to produce all our wines begin by being "destemmed", a process to separate the berries from the stem (the stems can cause the wine to have an unpleasant grassy bouquet).

Maturation

The maturation of the wine is the process which takes place between fermentation and bottling – this stage cleanses the wine and helps it to mature and enhance the bouquet. There are two main ways to mature or age wine: either in stainless steel vats or in wooden barrels. For our special wines, we chose to use oak barrels, a guarantee of quality in the eyes of many amateurs.

Finish

The special wines produced by the Abbaye de Lérins are unique: they are not the result of industrial production; they are produced from vines where every bunch receives individual attention, in an attempt to produce “perfect” grapes, whilst respecting the traditions and requirements of a monastic lifestyle throughout the process.

As a general rule the products produced by monasteries enjoy an excellent reputation. In our life regulated by prayer and silence, monks and nuns produce products which progressively gain in quality to become an integral part of our “culinary heritage”.

It is true that the Abbaye de Lérins has had to adapt to the challenges of modern life. It is for this reason that we have chosen excellence as our driving force, with regards not only to our production but also the presentation of our specially designed wine bottles, and of course in the quality and flexibility of our customer service.
